We experimented with different types of drinks for making Cowboys, while changing Baileys present no problems as many producers have a liquor that is similar, Butterscotch Schnapps has a taste all of it's own, but there are different flavours in Schnapps so you can try any flavour, there is an orange flavour that does work, also Medori works well with Baileys, you will have to try different alcohols with the Baileys to see what goes together, the main objective is balance and flavour when they do mix in the mouth, you don't want one to overpower the other, thats why the original recipe works.

BBQ Fillet & Quinoa lunch for two
2 x Tasmanian Salmon Fillets – 140gm each
1 cup organic baby Quinoa (I use the dark)
1 avocado
½ cup grated tasty cheese
Sliced spring onion (shallot)
2 x teaspoons mixed chia seeds
2 x perfectly poached eggs
2 x tablespoons toasted pine nuts
Mayonnaise
Salt & Pepper to taste
Prep:
Quinoa takes the most time as it needs 15 minutes on simmer then 10 standing.
I always put a clean tea towel under the lid on standing to absorb any extra moisture which ensures a nice fluffy consistency.
Everything else is prepared while the Quinoa is cooking.
The Fillets take only 3 minutes each side starting skin side down and, I personally think, need to be done in butter on the BBQ ... not so healthy!! You probably have your own preference to cook fish.
I have my water on a rapid boil in a saucepan after my fish is off the BBQ ready to lower my 2 eggs in gently for only one minute.
All my ingredients are prepared and in 2 white serving bowls I put the following:
1 large scoop of Quinoa
½ the cheese
1 poached egg
½ avocado
1 tablespoon pine nuts
1 skinless salmon fillet (take the skin off to serve)
1 teaspoon chia seeds
Spring onions
Swirl of mayo
Season to taste
This easy and healthy dish is a regular of ours

Here is simple dish full of flavour, where it asks for beef fillet slightly frozen so you can cut it thin, I go to Asian supermarkets, look in the frozen sections they have beef thinly sliced already packed ready to use, thinner than you could do at home, as the beef is cooked as the hot soup is poured over.
Beef Pho
200g of rice noodles sticks
1.5 litres of beef stock ( shop bought is fine, as is salt reduced )
1 star anise
4cm piece of fresh ginger sliced, doesn't need peeling
2 pig trotters cut in half by the butcher
1/2 an onion studded with two cloves
2 stems of lemon grass pounded
2 cloves of garlic pounded
1/4 tsp white pepper
1 tbs fish sauce
400g beef fillet
90g bean sprouts
2 spring onions finely chopped
25g fresh coriander chopped
25 g vietnamese mint fresh chopped ( or normal mint)
1 fresh red chilli sliced
fresh red chillies extra to serve, as well as coriander, 2 limes, cut into quarters and fish sauce
Soak noodles in boiling water for 10-15 minutes drain
Bring the stock, star anise, ginger, trotters, onion, lemon grass, garlic and white pepper to the boil in a large saucepan.
Reduce heat and simmer for 30 minutes.
Strain, return to pan and add fish sauce.
Divide noodles amongst bowls, then top with beef, sprouts, spring onion, coriander, mint and chilli, ladle over hot broth.
Place extra chilli, mint coriander and fish sauce in small bowls on a platter, serve with the soup and allow your guest to help themselves to extra garnishes if they like.
Serves 4
For those who like chewing on pig trotters, keep them to chew on later.

Anyone here follow a Low FODMAP diet? I have been doing it for near on 6 years now and it's made the world of difference to me.

Cheeper than the 'diet shakes.,' an on-the-go' filler or meal replacement (my dietitian says a heaps healthier alternative)
Time preparation: 5 minutes
Cost: very low
1 drink bottle
1/2 milk (of any sort)
1/4 yoghurt smooth (not Greek) or able to get through the top/straw of the drink bottle
A good dob of regular cream, this is the 'magic' thickner and filler
Shake to mix, but not to thicken or curdle cream!
fill to top with milk and/or yoghurt for consistency
A stick wand will blend ripened fruits finely enough for flavouring.

This is a great recipe I use as a sweet option when I need a treat. It just cooks for 25mins at 180 degrees .

Would you believe my purpose in life is to rescue books from the recycling bins.
One I rescued a few weeks ago is called the "low FODMAP diet" by Dr Sue Shepard Many letters after her name .
In the books opening pages it states that:
1. Fodmaps are molecules found in foods which in some people are poorly absorbed or not at all..
2. Food continuing down the inner regions of the body then arrive in the large bowel.
3. The normal bacteria which live in the bowel can then use Fodmaps as a food source.
4. When this occurs they produce a gas which can then cause wind bloating abdominal pain and absorbtion in to the blood stream.
The symptoms experienced by many with irritable bowel syndrome and fructose malabsorbtion.
5. Breath test for in Australia for Hydrogen and Methane byproducts are available For further info see ( Monash university) and Wikipedia
6. A friend of mines daughter 10 year old has Coelic disease along with type 1 diabetes. A distressing illness in one so young. Similar symptoms.

Thank you for your feedback.
I think food can impact so much on our health and well being and not nearly enough research is done on this. I advocate heavily for diet to be part of treatment plans, often falling on deaf ears.
After years of book collection I now have to do a massive clean out. Unfortunately this has me filling the recycle bin 🙁 because I can't give them away!

Alternate pizza sauce.
My wife has just recently found out that if she eats tomatoes she loses her voice which can be a pain or a pleasure depends on how one feels.
I decided to play around with some bits and pieces and came up with a new pizza sauce
Ingredients:
1 onion chopped fine
1/2 capsicum any colour
Beetroot and feta (black swan dip)
French onion dip ( any brand)
Sauté the onion and capsicum in a small amount of olive oil
Remove from heat
Add 1dessert spoon of each dip and blend together
That's it
This can be adjusted to suit but is tasty and a great alternative to other pizza sauces
as long as I wake up alive I'm happy Because it could be worse
